I’m trying to set up new iPhone do I need to use the new Sim card provided by Carrier (Verizon) or can I just use the one from the old phone?

If the iPhone is a Carrier locked then you need to use the SIM provided by Verizon, most probably that is the case.

If the old iPhone had Verizon SIM, you may use that too.
