My boss would like me to go through some text chains on his iPhone to determine the amount of hours he’s worked on a certain project. Is there a way for me to remotely have access to his iMessage or even specific threads? Can I do this without messing with my own messages? I don’t want my own messages to get deleted in the process!

Absolutely not. You would have to have his device in hand. You should never share login credentials with anyone or put someone else's account on your device. This can cause numerous issues that I won't go into here. The long and short is that you would have to use one of his Apple devices that has the thread on it. IF he has more than 1 Apple device and is using Messages in iCloud, all the message threads should be on all his devices and you can, if not, there is no other place to view them.
