My iphone 8 will not change to US English and I cannot delete the other languages which I see on Settings General Language and Regions Also when I accidentally hit the globe I cannot get back to English

You are in the wrong place. Go to settings > general > keyboard > keyboards (not "language and regions") and use the Edit button to get rid of everything except English.
