I have a mac mini 2018 connected to two external monitors. When I screen share from macbook air 2019 to mini the display on the laptop shows small version of both monitors. Is there a way to see one monitor at a time?

Did you want to use the "extend" function to have multiple monitors?
If so, you can click the "Airplay" button at the top, and then click Settings, and then uncheck "Mirror Displays"
