iCloud free space is over.
Now if I need 50 gb I have to do monthly subscription.
What my question is if I pay for only one month and cancel the subscription, what will happen?
What will happen to the 50gb?

It just says that iCloud won't sync anymore. It also does not indicate if you will lose the excess data and do not have a grace period on how long the excess data can remain in iCloud. I suggest to have a back-up before downgrading your plan.
So data will be deleted from iCloud if I downgrade?
I am not quite sure. I haven't took the risk and will never try it.
Apple is quite indirect about it. How about giving them a call to make sure? Contact Apple support here.
