Just bough 50GB of storage but it still says I have no more storage, I don’t know if I need to wait on something to update but it’s very irritating not being able to open gmail and other apps.

You are misunderstanding what iCloud storage is for. You cannot expand the capacity of your iPhone. If you purchase iCloud storage, YOU need to do something to utilize it.

You'll need to know what's taking up all your space to decide how to proceed..
you may end up needing to delete stuff, you may wind up needing an iPhone with more storage..

Set up and use iCloud Photos - Apple Support
Buy more iCloud storage - Apple Support
or you could transfer them to a computer and remove them from your phone..

if you see 'other' taking up a bunch of space..
