When my iPhone XS Max is on my wireless charger it sometimes gets taken over remotely and starts opening aps, taking pictures, sends text messages, sends emails, plays music, gets on Safari and opens different websites. I have recorded video of it happening while I am sitting by it. It usually happens in the middle of the night without me noticing it but in the morning I see the pictures that it has taken or emails/texts it has written.

That's symptomatic of a failing touch screen. your phone has not been "taken over".
Thanks for the response KiltedTim. It is not jail broken and I’ll need to take it to a Apple tech. I just have seen it happen multiple times and the way it scrolls through apps, types stuff and send things only when on the wireless charger and at night makes me question the touch screen failing/glitch. I’m not saying you are wrong but it is crazy to watch it happen.
I have read this before but this is hard to believe. Why is it only happening when it is on a wireless charger? Why is it actually typing and sending texts and emails which including attaching pictures to random contacts? Why is it taking pictures and marking it as a favorite? Getting into my music and playing songs?
You don't have to believe it if you don't want.
But, if your did not jailbreak your phone, there is no way for anyone or anything to "take it over".
