I recently upgrade from my iphone 8 to 11 pro. The erased all data on old phone. Can restore the iphone 8 from backup without affecting the new phone. Would be nice to have in an emergency if I lose the other one. I could also swap sim card.

I was sure that was correct as I still have my mint iphone 4s with all the original data, contacts etc. Just wanted to have a restored backup in the events of a loss. I could always restore then, but this would be more convenient.

You won't be able to keep the devices "in sync" for everything, but yes, you can restore a backup of your 11 to that 8.
The only requirement is that the 8 must be running the same version of iOS as the 11, or something newer.
Eventually, the 8 will not receive updates anymore, and you won't be able to restore a backup of the 11 to it.
