I was recently wondering what model of apple watch too buy. Can I use a pay as you go Vodafone sim in the in the cellular apple watch or will I need to get a monthly contact sim to put in the watch?

The Apple Watch always shares the iPhone’s phone number, so the iPhone cellular carrier must support the Apple Watch. The iPhone cellular carrier will charge a monthly fee on the iPhone bill. The U.S. carriers add $10 per month to the iPhone bill.

Usual approach is as an adjunct to or add-on fee to the existing and required iPhone cellular plan.
The GPS + Cellular Watch has already a builtin eSIM.
If your iPhone carrier support the Watch, then you will be sharing the same phone number as your iPhone, fees apply.
