I've just upgraded to an iPad Pro 3rd generation and for some reason I cannot copy text from it and paste to my iPhone, but it works the other way around. Any suggestions?

Are both devices running iOS/iPadOS 13.x? Apple Continuity functions (which include the Universal Clipboard) are know to have compatibility issues between devices running 12.x/13.x.
Yes, they are both running 13.3.1
The {2) suggests there is already a copy of that file on the destination device.
Hmm, it was a test (copied and pasted one word from one device to another).
