Have you had a look at the Help menu?
For formulas check out Formulas and Functions Help. There are lots of examples there, available in many different languages.
For general use of Numbers check out Numbers Help.
And you can find good examples of Numbers documents in the templates at File > New in your menu.
If you like to refer to books, you can check out this one. I don't have it but have seen comments that it is helpful.
