Numbers Cell Formatting

Is it possible to set and keep all columns as TEXT, and not keep default to automatic?

If I understand you correctly all you have to do is select all the cells in a table and choose 'Text' in the Data Format dropdown in the Cell tab of the inspector at the right (which you activate by clicking the 'paintbrush' in the Toolbar). That way, all the cells will be pre-formatted as text.
