However, you're correct that there is no actual golf ball. They have all the other kinds of balls - rice balls, disco balls, but no golf. And I think the golf ball is a distinctive shape.
I think you have two options. You can submit a request to the Unicode consortium for a golf ball. This request would certainly have a better chance of success than the typical politically-divisive-flag-request-du-jour. I checked the list of previous rejections and didn't find the word "golf".
I expect a Unicode request to take a long time, years even. This would (eventually) be represented as something similar to the bottom two images above, with a colour emoji character.
Another option would be to submit a Product feedback or bug report with Apple directly. This would be to request a new "SF Symbol" similar to the first image above. This would be part Apple's own repository of symbology that is outside of the standard Unicode symbols.

You can use any jpeg or png image of a golf ball or other combination as a folder image. Just select the image and do a copy. The Control (right) - click on the folder and bring up its Info window. Click on the icon in the upper left of the window and paste your image.

Yes, it is weird! Except for golf, there is basically every icon, from ice hockey to horse riding.
As an alternative, you can choose an emoji as your folder cover:
🖥️ Go to Finder
📁 Right click (for mouse users) or use two fingers to click (for trackpad users) the folder you want to customize, and choose Customize Folders
😀 On the bottom right of your page, click "Emoji", and choose the emoji you want to use, which includes golf!
