How to handle lost items at Apple Support service center in Singapore?
If Apple Singapore service Center lost a customer’s item, what can the customer do? Report this issue to the police?

Ask them what happened and how they think to resolve the matter. Sure they not just told you "Sorry we've lost it"
Filing a report with the Police is good plan if you think it is theft or criminal conduct.
