Because you still have iCloud sync still turned on and/or that was the last destination you used for Save As: in Pages.

As @neuroanatomist posted earlier, when you go to turn off iCloud sync, select the "Keep a Copy" and the Desktop and Documents files will be copied back onto and remain on your Mac.

As for Pages saving, you can always select a different save destination by clicking the double arrow there and choosing a new location from the sidebar or navigate to the appropriate folder. Even if you have iCloud sync turned off, you may still use iCloud Drive as a storage location if you like. If you want to do that, then choose that as the destination for your Pages (or other app) documents.

You need to slow down and continue turning off Desktop & Documents synching (where it asked what to do with the files). Click the Keep a Copy button and it will “move” them into an iCloud Archive folder on your home folder. You can then move them back into Desktop and Documents folders.

For other things you have stored in iCloud Drive, you can drag them out of icloud drive into a folder on your Mac.

Then, you can turn off iCloud completely.

How can I drag them, where do I find them?

Many people have already told you. If you click the button to keep a copy, they are inside the iCloud Drive (Archive) folder in your Home folder. If you chose Remove from Mac, you will find them in the Desktop and Documents folders inside of iCloud Drive in the Sidebar.

Have you disabled Desktop & Documents in iCloud Drive? Which option did you choose?

I was with Apple support, he was the one that said upload speed was slow and can take all day and night and not use the internet while doing it? Was he wrong?

No idea what you were discussing with him. If it was about moving files out of iCloud Drive, then internet connection speed has little to do with it except as to files that are only stored in iCloud Drive. As I already stated, files sync'd with Desktop & Documents in iCloud Drive are not removed from your Mac at all unless you have turned on Optimize Storage, but only a limited number of files will have been removed from your Mac.

There are also app-specific folders on iCloud Drive independent of Desktop & Documents--those you will have to download from iCloud Drive. If you still have iCloud Drive enabled, open the iCloud Drive folder in the Sidebar and move those folders to your Mac somewhere inside your Home folder--stay away from the Desktop & Documents folders until you disable that part.

What does that have to do with anything you are asking.

Although it makes you think your files were uploaded and no longer on your Mac, that is patently not true.

macOS uses file system sleight of hand to make it appear the files are stored somewhere else. At this moment, they are still inside your hidden Desktop and Documents folders.

When you disable Desktop & Documents in iCloud Drive, more file system magic is used to make them appear to have been moved. The files are still stored in the same exact location on your drive in your Mac.

When you move them back from iCloud Drive, nothing is downloaded. New file references are created in your home folder inside the iCloud Archive folder. Still, not a single bit has changed locations. When you "move" the files, new references are created in the location you move them into. It all happens pretty much instantly.

You can not use that as an excuse for your initial query — I can not help you there.

If you have an ongoing issue with a slow internet then resolve that issue.

—Talk to you internet provider service ...for better service

—change your provider service ...

—use your cellphone as a hotspot would be better then your dial-up speed...
