What is the best/easist way to create password protected document, eg in textedit, notes or pages?

1 - TextEdit does not have that ability
You may need to Export the file to a PDF format and then Password Protect the file

Another possibility is to store the files you want to protect on an encrypted Disk Image, where the disk image protects the contents, rather than the individual files.
better path is to make a user account for the people who will be using the computer
Do not fail to select the Remember this password in my keychain (if present) on the Set Password panel. Too many users over the years have ignored this only to forget the document password and ask for help accessing their document. There is no help.
When you check that box, and as long as the content remains in your account, on the current Mac, the application will ask the keychain to automatically provide the password and the password-protected content will just open normally without your intervention.
Fail to do the above, and no one on earth but you can provide the password. If you forget it, you are done.
