Ahoj....., podporuju nové jablkové hodinky ultra 3 volania cez WiFi? ako VoWiFi?

If your iPhone supports Wi-Fi calling, the Apple Watch will support this as well:

Wi-Fi Calling is enabled automatically for Apple Watch when you turn on Allow Calls on Other Devices.

I can leave my iPhone at home, even switch it off, and make and receive calls, notifications, etc, on my Ultra 2.

However, some users reported, that their iPhone at home still has to be connected to the cellular network, to make this possible. You should also ask your carrier about that.

Sure, I understand that, but what if I don't have an iPhone, or I'm completely out of iPhone range? Can I use VoWiFi without a phone? If the watch has a separate eSIM card, I don't mean calling via Bluetooth, I mean calling directly from the watch without using a phone if I don't have a phone...

The carrier for your iPhone has to support the Apple Watch eSIM. Without an iPhone you can not use the cellular Apple Watch, unless you set up the watch for a family member, which has also to be supported by your carrier:

My operator supports it on iPhone and it works fine on my phone... Just so we understand each other correctly, I only need the phone for the initial setup, but after setup I can leave the phone at home, turn it off, and walk away with the watch out of range of the phone, and calls and VoWiFi will still work without the phone, right?
