Creating an email acknowledgment button for group instructions

I want to email a group of employees a set of instructions for an upcoming assignment. I want each employee to acknowledge that they have read these instructions. Is there a way to insert a button in the origional email, that creates a new email back to me, with the Subject saying “Acknowledgement" and the Body saying “I have read the instructions.” and have this email sent to me with the click of the button?
