Missing iphone profile icon in airdrop

Have you shut down all devices and restarted...(?)

I would let it resolve itself over time...

if it is mission critical you can try A SafeBoot Start up your Mac in safe mode - Apple Support which will sort many anomalies

Login and test. Reboot as normal and test. Caches get rebuilt automatically.

Just got a new MacBook, and I'm running the newest version of Tahoe, and I'm having the same issue one month after you posted this. From my other devices on AirDrop, I see the name of my device with a plain white icon. AirDrop works, but it's odd because my other devices appear with icons. Turning the device or Bluetooth off and on again makes no difference. I'm sure this is a software glitch.
