Although the date, subject, etc. for my InBox messages, the message doesn't show below them when I select one (see attached). Clicking on a Subject line will open the message, though. I apparently accidentally cancelled this behavior and can't find a way to reactivate it.

Try the Column Layout. You can find it under "View".
You can try "Sort By", under "View"
or you can try Filter>Enable Message Filter under "View" but email can disappear so I don't enable it.
You have to experiment with apps and the Settings in them to get what you want.

It's been checked all along. Cycling the check didn't help.
I've rebooted both the Mail app and the OS. I see no setting regarding the concept, either.
