Prior to updating, when I would click on links (e.g., Zillow, Bloomberg, etc) in email or browser it would open the corresponding app. It now always opens in the web browser and I am unable to find any means of correcting this.
any ideas?

In Safari you can decide how to open a specific link (in another browser or in an app) by using "Tab and Hold" gesture and select the app. I don’t know why it changed for you.
Yes, if I tap and hold a link in safari I can have it open in the app. But every email link, for instance, does not. Historically, open in app would be honored from everywhere. Even map links open Google Maps in the browser, which is terribly annoying.
