Upgrading from iPhone 13 Pro Max- worried about AI

My husband and I are upgrading our phones and we are not interested in engaging artificial intelligence server farms in any way shape or form. We also want to protect our information and really do not want anything on the cloud. Should we avoid the 17 models?
