Delay while writing with Apple Pencil

I’ve noticed that when writing with my Apple Pencil on my science notes (in the notes app), there has been a delay with almost every interaction (writing, erasing, undo). It is a pretty large document that I have been regularly adding to for almost a year so that might be the issue but I was just wondering if that happens t anyone else/what fixes there might be.
