Fraudulent gaming charges on unknown account
Starting Monday, numerous charges to a gaming site that I have not used

Where are you seeing these charges?
Apple Pay uses your finger print or face to authorize a charge, so it cannot happen automatically and cannot be fraudulently used.
If you paid on a website withy it for recurring subscription with Apple Pay, they can continue to charge you and you would need to cancel that subscription directly on the website you started it on.
Do you share your credit card with any one?
Is this happening with a payment method in the apple Wallet app or through tour Apple account?
You need to explain clearly and in detail what you are seeing, and where.
