I can’t understand why a company like Apple which built their entire existence on a mobile business still defaults the phone type to “ Home” when creating a new contact in the Contacts app. Why not default to mobile ? Its really annoying especially when most consumers have mobile phone as their default device.

You can't change the default. Let Apple know you'd like that option using the feedback link provided.
For what it's worth, having the number listed as "home" doesn't affect your ability to do things like send messages. The labels are just to make it easier when you look at the contact.
You could try Apple Feedback
but don't hold your breath. I've been raising feature/bug requests about Contacts since 2009 and nothing's ever been fixed or changed.
