You need to set up the Google SMPT server first. Check what the GMail SMPT settings for your account are (Google them - I don't use Gmail so can't help) then hit the "edit smtp server list" in the pop-up.
You have set up your mail account in the Mail app, haven't you? Sorry to ask - but it just dawned on me that you might not have.
Why? You cannot. Either delete all the mail accounts in the app or just do not use. The mail app will not use any resources if not used.
Can you explain the problem you are having that made you assume the solution was to remove the Mail app (you can't).
The problem is every time my cursor hovers (even accidentally) on an email address the **** apple mail app pops up and asks me to select a provider or configure something else. I use Apple because I got tired of this techno mumbo jumbo from Microsoft.

It appears to be asking you to set up your account in your desired email client. What is the name of the company that provides your email account? That would be your email provider.
Ok. Now it's doing something else. The email popup shows my correct gmail address, but it does not provide a "Send" option or any other option.
Okay, now it's doing it. This is the screen shot
I have not seen that action when I hover over an email. What mail app do you want to use? If you right click on an email you can change the default app to open this and all other emails as desired.
I've never seen this. Could you provide a screen-shot of the pop up?
I must have accidentally clicked on the email address because now that is the only way I can engage the apple mail app to pop up. I was trying just to copy it so I could paste it in my gmail.
The send button is the dart-shape next to the green dot.
