Siri issues with Apple CarPlay since iPhone update

I just updated my iPhone 15 Pro to iOS 18.1 and since then Apple CarPlay in my 2024 Subaru Forester is not working properly at all. If I ask Siri a question, she seems to listen, but then there is no response. For example, if I say, “Hey Siri, send a text,” the little ball will appear to indicate she’s listening but after that, nothing. She used to ask me who to send it to and what to say, etc. The Pandora app is also not performing as it used to, it’s not moving from channel to channel and also is not responsive with Siri. I have restarted my phone multiple times, and also disconnected and re-paired it to my car. I reset my car to factory settings. The screen on my car is also different, it automatically goes to a split screen with Google maps, Pandora, and a third screen when previously it would just be Pandora when I started my car. I am very frustrated and would appreciate any help with getting things back to how they were before this update. Thank you.
