Bump overdue tasks (i.e, set next follow up reminder) to next working day

When my work tasks are overdue, at the end of my working week, I want an option to bump the reminder to "next week". The default options in the notifications view seem to be for a reminder in an hour, tonight, or tomorrow, and then if I click on a task reminder, thereby launching reminders, the suggested (easily selected) options are similar, but also include "next weekend". I want to be able to easily bump tasks to next working day.

The same behaviour is consistent across my iphone and mac. I must be missing something obvious, right?
