Coinstar e-gift card to wallet transfer
I used a coin star and selected the ecard option because it said I could use it with Apple wallet. When I went to add funds to my wallet it said that I could not use the ecard funds

You don't add it to your Wallet, it is added to your Apple Account in the App Store. Review the information provided by CoinStar and use the link they provide or go directly to the App Store to add the funds. It can also be used at the Apple Store or Apple.com. It states that it is not redeemable for cash, like the other Gift Cards, so you will not be able to transfer it out of your Apple Account and into Apple Cash.
