Deleting personal data Apple is collecting on me without my consent

Under Apple Wallet settings on my Mac are listed a number of addresses, one of which I never disclose and certainly not to Apple. I don't know where they got it from (automatically associate information from a contact in my address book with it?) as I've not disclosed it, barely ever used Wallet (just for like the occasional boarding pass or once a travel card), and have Siri disabled across devices. So first, I want to know how they got it because this feels so invasive. Second, I want to delete these addresses but there are no options for doing so (these are listed in a dropdown menu to select from) and nor do these options appear on my idevices (only on Mac's settings page).

The only other possibility is you entered the address in Safari and Safari displays it from its cache as a possible address. A real remote possibility is you used it as a billing or shipping address for a credit or debit card account you added to Apple Wallet. Then the bank may have shared it because it’s associated with the card and required to use Apple Pay online.
