I want to delete all banking info and passwords for my banking from my iPad and iPhone but keep it on my Imac studio 1. Since I am connected to the cloud will it delete from my Mac also ?

the way you connect or disconnect your device passwords is by allowing/disallowing your local KEYCHAIN (which contains those passwords) to be shared into your iClould account
system preferences > Internet accounts > iCloud ...
[√] Keychain
I think you would need to disconnect the Mac from iCloud. Then it won' be affected.
