What server settings doe OS X 14 use now 2024?

I ma having mail issues recently. I used to use none and it worked fine. It used to even allow me to combine my Apple ID's (I could use both/either). Now I cannot mail from my computer at all it seems it is trying to use the Google server. It used to use none before. I can sign into my iCloud account just fine. It seems a little slow but it is working with my primary ID I haven't tried my older ID which I just recovered. I have Google and Exchange also configured and they seem to work. My Apple ID wants to use the Google server. If I try to delete and reinstall the account I will be taken to my Apple ID to sign out of the computer. This can take 10 -30 minutes to sign out and sign in it has a long log-off time trying to synch data I suppose! Should I try to enter the Apple server settings I haven't used those in possibly a couple of years. Can someone clear this up for me?
