Keynote Randomly dropping second display

On the churches Mac Mini M1, while running the slideshow in Keynote, the second display that is being sent to the main screens keep randomly cutting off. It’s like the computer all of a sudden doesn’t recognize that a second display is plugged in anymore. There is nothing specifically that triggers it. No one touches the cables at all. It’ll be gone a couple seconds and then comes back. I’ve tried changing the sleep settings as well as upgrading the UsbC to hdmi adapter to the Apple one. I’ve also changed the HDMI cables to 8K capable instead of cheap bulk hdmi cables. Still doing it. Anyone got any ideas?

maybe I need to get a dock to add more Thunderbolt ports?
