but doesn’t remember the Apple ID or password doesn’t remember any of it how can I remove the Apple ID so I can use the iphone

No, you cannot use the iPhone because it is most likely been activation locked to your bosses old Apple ID

If your boss still has valid proof of purchase information for this iPhone, he start an Activation Lock support request. At Apple to get the lock removed.
