FaceTime keeps opening and I keep seen my old and ugly face. Why is that? What is the purpose of this?

macOS allows you to specify apps you wish to open automatically when you log in. It sounds like you requested FaceTime to open automatically.

I want to receive phone calls when my Mac. FaceTime show up on the dock, not in a window.

Looking at Calls on Other Devices on my iPhone, I see that two Mac's are allowed calls on. I only have one Mac. Go figure.

Not in the list of apps to open upon booting up. And it doesn't answer my question as to why I'm seeing myself.

I think it is when I receive a call on my iPhone is what triggers it.

If that’s the case, you can control that on your iPhone at Settings > Phone > Calls on Other Devices.
