erase my mac

I want to erase my MAC (2017) and rebuild it. I want to clear data that is no longer used by removing outdated apps and associated files and start clean. How do I maintain my data that I want to keep like Contacts, etc. The backup information will be on icloud along with files I know I want.

How will this affect my ipad, iphone & watch?
