macOS Big Sur
am I able to use my 2013 iMac 21.5 with an upgraded ssd with Mac OS Big Sur or will it be too lazy to get anything done?

Your iMac is compatible with Catalina though, that will run very smooth on a SSD macOS Catalina is compatible with these computers - Apple Support
