If you accept the Applecard after approval…does it then affect your credit score (hard inquiry)?

If you accept, it will, yes. Applying is a soft pull, but once you accept the offer, it is a hard pull.

Any change to your credit will at least for 30 days or so. Pay your bills on time, keep card balances low ... should all be good.
