How to you get a map using the Workout Cross Country Skiing?

You cannot, because cross-country skiing app does not use the GPS... This is so disappointing. Many of cheap fitness trackers will give you miles for cross-country skiing, but not Apple Watch. I really wonder how many cross-country skiers actually care more about calories burned than distance...

Because cross country skiing doesn't use GPS then you won't get a map recording.
