Activation lock problem

I erased all content and settings on my Apple Watch 3 and then I unpaired my watch. I did it in reverse by accident.

Is this a problem with the activation lock? I need to return the old watch as it is a trade in.

My new Apple Watch 7 is the only one on my phone Watch app showing as paired.

You did do it in reverse. Go to www.icloud.com Sign in with Apple ID and Apple ID Password. Check your device list and remove the watch from there.
