Is the apple trade in possible in person and to be completed on the day?

If you set it up to be done at the store, yes. You make your order, set up the trade, and set the iPhone to be picked up at the store of choice. After you have setup that appointment, make sure you have the device backed up and ready to trade-in, go get your new device and you can trade-in the old one. I do it all the time.
