URGENT!!!
I updated my iPhone 12 Pro Max to 14.7.1 today, via my MacBook Pro.
Before the update (iOS 14.6) the Photos app was able to Import my photos without any issue.
As of iOS 14.7.1, the Import screen is frozen on: Preparing to import from "iPhone"

How long have you left it on preparing to import.
Updates can sometimes trigger a rescan of the library which can take a long time. I would suggest leaving it on preparing overnight to see if it completes.
Hence my suggestion to try leaving it overnight.
On the other hand, rbdancer has just reporting fixing a similar issue by changing USB port. If you are going to try this, I'd try all available directly connected (not hub connected) ports, and I'd also try different USB cables. Preferably apple original.
Yes, it takes some time to "prepare" on occasion. But I left it for 45 minutes.
Photo Import is broken with iOS 14.7.1 update.
