If you know how to install the software for my C-Pen TS1, let me know. My computer with Big Sur won't let me override the internet to download the software for my new C-Pen

You can download support softwares from following site.
Check with the makers of your scansnap to see if they have updated 64 bit drivers that work with Big Sur.
