If you ordered the subscription through the YouTube app then you can cancel it through the YouTube app. If your ordered the subscription through Apple then you can open Settings ➔ Apple ID (Your Name at Top) ➔ Subscriptions : Here find the YouTube Premium and cancel the subscription.
