After I click on finder icon in the docker, a new finder window opens instead of switching to the already opened one. This is frustrating and leads to 10-20 finder windows quickly and then I have to close them. Can someone please offer some solutions?

I can't recreate the issue on 5 different Macs running Big Sur. Can you test while in Safe Mode?
All I can confirm here is that on Big Sur 11.0.1, multple clicks on the Finder Dock icon only shifts focus to the current Finder window on the Desktop. Under no circumstances can I generate multiple Finder windows by repeatedly clicking the Finder's Dock icon.
