if its already in progress? you don't..

If it's just downloading the update, you should be able to stop it from updating. make sure you have the switches turned off in

Settings > General > Software Update > Customize Automatic Updates

When this loads up, scroll thru the list of apps, you should see something like iOS 13.7 listed presumably close to the top. You can tap on this and select delete
