If your iPhone, iPad, or iPod touch is lost or stolen - Apple Support

then report it stolen to your local law enforcements, and your insurance company and your carrier

in some countries providing the police with the IMEI will have them block it at all carriers, in others

you just get your carrier to block it on their network.
