Deleted info on my emails on my 11 iPhone and mac computer

That's life: e-mail massages are synced from provider's server(s) to your iPhone, iPad, computer, and so on. When you delete messages, they are deleted everywhere.

You can try and ask your e-mail provider for help (perhaps they keep your deleted messages for a while).

That's how modern email works. Delete it on one device and it's removed from all the others with the same ID.
