in previous models you could swipe previously viewed apps by double hitting the home key then sweeping them off, how do you do this on the 11

You don't need to swipe up diagonally. Just swipe up from the bottom of the screen with your finger to the middle of the screen and hold brings up the app switcher. I do it from the middle of the bottom straight up quite successfully.
