Does any one know if I delete my verified number if it will bypass the two-factor authentication? I don't want it on my phone anymore.
iPhone XR, iOS 13

In addition to what ckuan has told you, If you remove your trusted device this is what happens:
"Removing a trusted device will ensure that it can no longer display verification codes and that access to iCloud, and other Apple services on the device, is blocked until you sign in again with two-factor authentication. "
You cannot delete 2FA. Best you configured at least 2 trusted phone numbers for 2FA.
FYI: The new iOS. iPadOS and macOS needs this security.
